Beggar's Chicken

It is said in the Qing Dynasty, at the foot of Yushan Mountain in Changshu, a beggar caught a chicken.He just killed the chicken and got out its viscera.Because there was no boiler or cooking stove, he wrapped the chicken with several lotus leaves, and sealed the chicken with mud, then baked it on a simple furnace.He removed mud after the chicken was cooked, and the good smell came out immediately.A lot of people stopped walking, just to breathe the fragrant and delicious smell.Later on, this cooking method has spread away wildly.People call this dish beggar's chicken.

Stinky Doufu

Chowdoufu, also called "stinky doufu", is a favorite in China.It leaves an unforgettable impression upon foreigners, who either found they love it or wish they never smelt it.Stinky doufu is a form of fermented doufu, which, as the name suggests, has a strong odor.However, it is a popular snack in East China.They are usually found at night markets, roadside stands, and temple fairs and often as a side dish in lunch bars.Wide regional and individual variations exist in manufacture and preparation.Most typically, it consists of doufu which has been marinated in a brine made from fermented vegetables for as long as several months.It can be eaten cold,steamed, stewed, or most commonly, fried.It is often accompanied by chili sauce.
